Seriously people, this is not even cooking. It’s basically a public service announcement. This is the shortest distance between you and curry. All you do is add a couple of pounds of chicken tenders, a jar of Trader Joe’s Masala simmer sauce or a jar/bottle of another on-plan curry simmer sauce, and cook on low in your crock pot for 4-6 hours until done. Then shred the chicken and add some more heavy cream if you like before serving over caulirice, any veggie of your choice, or brown rice for an XO. That’s it. Pinky promise. Told you it was my easiest curry other than takeout, and so much healthier!
All you have to do is dump and go, buttercup. Add a frozen veggie or quick salad to that and you’ve got a meal. I love easy meals like this and if you follow me on Facebook you know them as #feliciasdumpmeals. They’re awesome. You could easily do this in ten minutes on the stovetop with cooked shredded chicken(or even canned chicken!), or take a little longer with raw chicken cubes if you don’t want to go the crock pot route. I’m sure this could be cooked quickly in an Instant Pot or pressure cooker but I didn’t get the chance to experiment with that yet.
Easiest Dump Curry THM S
A creamy, dreamy, curry with only three ingredients and five minutes active cooking time.
Ingredients
- 2-2.5 pounds boneless chicken tenders or chicken thighs
- 1 jar Trader Joe's Masala Simmer Sauce or other on-plan curry simmer sauce
- 1/2 cup heavy cream optional
- salt, pepper, and cayenne to taste
Instructions
Place the chicken in the bottom of a slow cooker and pour the sauce on top.
Cook on low for 6 hours or until done, adjusting times as needed for your slow cooker and if you use a different type of meat.
Shred the chicken with two forks. Add the cream, if using, and season to taste with salt, pepper, and cayenne.
Serve with caulirice or desired accompaniments.
