This is another one of those super easy weeknight meals that barely qualifies as a recipe and these are the ones we all need more of in our arsenal! It seems I get the most response on Facebook from the easiest meals and I get it. We are busy, tired, and need an on plan meal that satisfies the whole family and comes together quickly.
I have a whole passel of recipes that start with either smoked turkey sausage or chicken sausages and are on the table in under 30 minutes flat, sometimes 15 or 20. If I have sausage and fresh or frozen veggies, I have a meal. Many times I change it up and just make it up as I go along, but this is my version of one I had at a friend’s house that is worth writing down and making again.
To keep this an S, serve it over greens like romaine, spinach, or spring greens. Trust me, it is so delicious for the warm sausage, veggies, and vinaigrette to mingle with the greens and wilt them slightly. It’s a huge warm salad that is hearty and filling and doesn’t feel like having salad for dinner. Who can say no to nice hot sausages and peppers people? You can certainly make your own on-plan balsamic or red wine vinaigrette, which I do all the time, but this time we used a store-bought one from Aldi that was perfect. Remember, for my Drive Thru Sues out there and just anyone who needs to buy some dressing sometimes, any store-bought dressing with less than 2g net carbs is on plan. Woohoo!
For an XO option to fill the growing members of your family, your Trim Healthy Husbands, or just yourself if you are in maintenance or needing an XO tonight, serve it over roasted golden potatoes which is so delish or over brown rice. I can’t wait to try it over crispy herby golden potatoes. Sounds like an amazing crossover to me. It’s always hard to say how many a recipe will serve depending on your family size and appetite. This will definitely feed 3-4 adults and can easily be multiplied to fit the number of mouths around your table.
Sausage and Peppers Vinaigrette THM S with XO option
A quick, easy weeknight meal of sausage and peppers over greens, roasted potatoes, or brown rice
- 1 rope turkey smoked sausage, cut into half moon slices can substitute other sausages if you wish
- 3-4 multi-colored bell peppers, chopped roughly
- 1 large sweet onion, chopped roughly
- olive or coconut oil for sauteeing or fat of choice
- salt, pepper, and italian seasoning to taste
- on-plan vinaigrette for serving
- greens (for S), roasted potatoes or brown rice (for XO) for serving
Heat a cast iron or other large skillet over medium heat.
Add a few tablespoons fat, veggies, and seasonings.
Cook until veggies are mostly done to your liking.
Add sausage and cook until heated through and starting to brown.
Serve over desired accompaniment and drizzle with vinaigrette.
