Roll call: where are the night owls out there? I should so be in bed right now but I really want to bring you this recipe. Over the last few years I have become both a night owl and a morning person. It’s not working out very well. So on to the chili. These kinds of recipes are my favorite- the ones that conjure up memories of a great comfort food but with bolder flavors and a twist to keep it fresh. This particular one is inspired by a sweet potato chili one of my oldest and dearest childhood friends made for me when we visited her over Christmas. It was downright delicious, plus obviously she gets me because she made a paleo-friendly meal I could drop my face in without feeling guilty. Win.
Just today I got to talk with some ladies at the gym about how it is possible to get healthy again if you are overweight. It is so encouraging to be able to share my experience with others because it is such a widespread problem. So, whoever you are, thank you from the bottom of my heart for reading this. The reason I started this blog is to share encouragement with others who may feel discouraged or stuck in their health or weight. I am absolutely certain that if I can do it anybody can, and that hearing from someone else who has been through the same thing is helpful along the way.
Secrets of this Recipe
There are two things that make this extra delicious in my opinion. One is the amount of chili powder- a full 1/3 cup. Don’t be afraid of it! It just brings out that rich, full, long-simmered flavor. The other is the smoked paprika. Over the last few years I have found that I pretty much love smoky flavors with everything. Smoked paprika is a wonderful way to add that dimension without having to add the heat of something like chipotles. If you are daring, you can used smoked hot paprika but be careful because some varieties are very hot! I use the mild kind and then add some cayenne to this recipe to give the right amount of heat. You can adjust it according to your family’s taste buds.
Smoky Sweet Potato Chili THM XO- Paleo, Whole30
Treat yourself to a steaming bowl of this smoky, savory sweet potato chili! It's a satisfying meal that tastes like you simmered it all day.
Ingredients
- 2 lbs ground beef
- 1 medium onion, chopped
- 3 cloves garlic, minced
- 2 15-oz cans diced fire roasted tomatoes
- 1 15-oz can tomato sauce
- 4 cups beef stock
- 5 cups cubed sweet potatoes
- 2 medium carrots, diced
- 1/3 cup chili powder
- 3 Tbsp. smoked paprika
- 1 tsp. dried oregano
- 2 tsp. salt
- 1/2 tsp. pepper
Instructions
Brown the ground beef with the onions over medium heat in a dutch oven or large pan. Drain if your meat was especially greasy or if you desire.
- Add the garlic and saute for one additional minute.
Add the remaining ingredients and stir to combine. Bring to a boil and then turn the heat down to let it simmer for 30-40 minutes, until the sweet potatoes have cooked through and the flavors are blended. If you have more time, let it simmer a few hours.
Slow cooker preparation: brown the ground beef and onions then add to your slow cooker. Stir in the rest of the ingredients. Cook on high 4-6 hours or on low 6-8 hours.
