Avocado Chocolate Mousse THM S with paleo, keto and AIP options

A decadent chocolate mousse you won't believe is low sugar and made from avocados!

Ingredients

  • 2 hass avocados
  • 1-3 tbsp granulated erythritol and stevia blend such as THM Gentle Sweet, adjust to taste see notes in blog post, use the sweetener of your choice, you could use honey or maple syrup
  • 1/4 cup full-fat coconut milk adjust for consistency
  • flake salt or sweetener for serving, optional
  • 3/4-1 cup cocoa powder or roasted carob powder adjust to taste

Instructions

  1. Place all ingredients (except optional salt) in a food processor.  Process until smooth.  Adjust for sweetness and consistency, adding more coconut milk in 1-2 tablespoon increments if needed to be creamier and more mousselike.  For a fudgy pudding, use less.  Serve sprinkled with flake salt or drizzled with a little maple syrup.
