Ingredients

  • 2 lbs ground beef
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 2 15-oz cans diced fire roasted tomatoes
  • 1 15-oz can tomato sauce
  • 4 cups beef stock
  • 5 cups cubed sweet potatoes
  • 2 medium carrots, diced
  • 1/3 cup chili powder
  • 3 Tbsp. smoked paprika
  • 1 tsp. dried oregano
  • 2 tsp. salt
  • 1/2 tsp. pepper

Instructions

  1. Brown the ground beef with the onions over medium heat in a dutch oven or large pan.  Drain if your meat was especially greasy or if you desire.

  2. Add the garlic and saute for one additional minute.
  3. Add the remaining ingredients and stir to combine.  Bring to a boil and then turn the heat down to let it simmer for 30-40 minutes, until the sweet potatoes have cooked through and the flavors are blended.  If you have more time, let it simmer a few hours.

  4. Slow cooker preparation: brown the ground beef and onions then add to your slow cooker.  Stir in the rest of the ingredients.  Cook on high 4-6 hours or on low 6-8 hours.
