Sausage and Peppers Vinaigrette THM S with XO option

A quick, easy weeknight meal of sausage and peppers over greens, roasted potatoes, or brown rice

Ingredients

  • 1 rope turkey smoked sausage, cut into half moon slices can substitute other sausages if you wish
  • 3-4 multi-colored bell peppers, chopped roughly
  • 1 large sweet onion, chopped roughly
  • olive or coconut oil for sauteeing or fat of choice
  • salt, pepper, and italian seasoning to taste
  • on-plan vinaigrette for serving
  • greens (for S), roasted potatoes or brown rice (for XO) for serving

Instructions

  1. Heat a cast iron or other large skillet over medium heat.

  2. Add a few tablespoons fat, veggies, and seasonings.

  3. Cook until veggies are mostly done to your liking.

  4. Add sausage and cook until heated through and starting to brown.

  5. Serve over desired accompaniment and drizzle with vinaigrette.
